How do you like to start the day?

I start every day by drinking water. I find taking an internal bath of 1-2 litres over the morning is great for waking up my body. For me, it’s non-negotiable to do some form of stretching and mobilising, followed by some form of meditation. While sometimes it may be quick or much longer depending on practices and techniques I’m into, I aim give myself a good half hour or more to warm up my body and get grounded. I find this sets up my day for maintaining an awesome mindset and making positive choices.

Describe a normal day of eating for you

I usually don’t eat until midday or around 11 am. I like to eat a porridge-like warm smoothie made from cooked sweet vegetables such as beetroot, broccoli, or parsnips. With plenty of protein and healthy fat, this usually keeps me going into the late afternoon. For a late lunch/snack, I’ll have some cooked vegetables or leftovers with some meat or a can of sardines.

I like to keep things simple and straight forward when cooking dinner. The standard dinner at my place is roast or sautéed vegetables and chicken cooked on low heat. I always used plenty of spices, herbs, Himalayan salt, onions and garlic in cooking.

When I’m organised I have green dressing or pesto to add to veges to make them interesting.

Name 3 staples in your pantry

Salt, pepper or curry powder, coconut oil – I took all these away with me over New Years. If you have these you can make any vegetable or protein delicious. Other than those, fresh produce are staples.

Coconut oil: I eat this daily usually for cooking but also sometimes as a source of healthy fat in smoothies. I often like to make hot chocolates with cocao or dark cocoa powder and a teaspoon of coconut oil instead of milk.

Leafy greens: There is always some form of green vegetable in my fridge. Today I have kale, parsley, and spring onions. They quite often feature in every meal and make an easy lunch when wizzed together into a soup or smoothie bowl.

Cocao powder: Chocolate is the other love of my life so I eat raw cocao powder daily. It provides so many amazing health benefits from minerals and powerful polyphenols without sugar or the nasty fats or fillers used in popular chocolate brands. This goes into my warm smoothie bowl, hot chocolate, or sometimes mixed with avocado and fruit, all which hit the spot if I feel like I’m hanging out for a sweet treat.

What motivates you to eat the way you do?

When I eat well and listen to what my body needs I feel great and have more energy.
